Set up Hello demo extension after installing NotNotch
After install, Hello demo extension is opt-in through Settings so existing users are not surprised. The first-party Hello plugin is off by default and can show a tab plus a host-drawn chip.

First launch
Finish onboarding, then open Settings and enable Hello demo extension if you want it.
Permissions
macOS may ask for calendar, notifications, or files depending on Hello demo extension. Decline any you do not need.
